Pav Bhaji Recipe - A Famous Mumbai Street Food

Pav-bhaji is a mixture of vegetables, either whole or mashed vegetables of bhaji garnished with coriander, chopped onion, and lemon with lightly toasted pav using butter.

Ingredients:

1. 2 Medium Size Potatoes
2. 1 cup of carrot pieces
3. 1 Capsicum/ green bell pepper
4. 2 Brinjal/ eggplant chopped
5. Half cup of green Peas
6. Chopped Onion slices
7. 2 Tomatoes
8. 3 Table Spoons of Pav bhaji masala 
9. 1 Table Spoon Chilly Powder
10. Salt to taste
11. Half table spoon of ginger garlic paste
12. Butter
13. Lemon
14. 2 Table spoon of  olive oil 

Step 1:

capsicum slices
1 Chopped Capsicum/ green bell pepper

2 Chopped potato pieces

chopped carrot pieces
1 cup of carrot pieces

green peas
Half cup of green peas

brinjal pieces
2 Brinjal/ eggplant pieces

Step 2:

  • Mix all these vegetables together in a pressure cooker by adding one cup of water and boil it.
  • Then, add cooked vegetables into a bowl and mash them.
Step 3:

Step 4:
  • Heat pan and add 2 table spoon of olive oil.
  • Add chopped onion slices and fry till they turn to soft.
  • When onions are fried then add 1 table spoon of ginger garlic paste to it.
Step 5:

Step 6:

  • When onions and ginger garlic paste were soft, then add fresh tomato paste and cook it.
  • While tomato paste is cooked then add mashed vegetables to it.
  • Keep on stirring occasionally and let the bhaji simmer for 12 to 15 minutes on a low flame. If the bhaji becomes dry and then add some more water. The consistency is neither very thick nor thin.
  • When the pav bhaji simmers to the desired consistency, check the taste.
  • Mix all the ingredients together and add 2 table spoon of chilly powder and salt to taste.
  • Then, add 3 table spoons of  Pav bhaji masala to it. ( we can get it from any supermarket).
Step 7:

  • When done, garnish with coriander leaves. Serve with chopped onions and chopped lime. The lime juice has to be squeezed on the bhaji and topped with chopped onions.
  • While serving, add  butter to the bhaji and serve with buttered pavs.
  •  In fact, with more butter, the pav bhaji tastes very good. 
Step 8:
  • On a flat pan heat add little bit butter or ghee.
  • When the butter melts, keep the pav on the melted butter so that it absorbs the butter and fry for a minute.
  • If you want to make the pav crisp, fry for a few more minutes. Serve the pav hot with the bhaji.
